Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup vegetable oil for frying
- 4 burger buns
- 1 cup coleslaw store-bought or homemade
- 4 slices of cheddar cheese
- Pickles optional, for garnish
Instructions:
Place the chicken breasts in a resealable plastic bag and pour in the buttermilk
Seal the bag and refrigerate for at least 30 minutes or up to 4 hours
In a shallow dish, combine the flour, salt, black pepper, paprika, garlic powder, and onion powder
Heat the vegetable oil in a large skillet over medium-high heat
Remove each chicken breast from the buttermilk, allowing any excess to drip off, and then coat it in the seasoned flour mixture
Place the coated chicken breasts in the hot oil and fry for about 5-6 minutes per side, or until golden brown and cooked through
The internal temperature should reach 165F 74C
While the chicken is frying, lightly toast the burger buns in a separate skillet or toaster until they are golden
Once the chicken is cooked, place a slice of cheddar cheese on top of each chicken breast and cover the skillet to melt the cheese
To assemble the rolls, spread a generous amount of coleslaw on the bottom half of each bun
Place a fried chicken breast with melted cheese on top of the coleslaw
Add pickles if desired, and then top with the other half of the bun
Serve immediately and enjoy your Fried Chicken and Coleslaw Rolls!
