This homemade ice cream tastes like After Eight mint, which is both refreshing and rich. Creamy and minty, with delicious bursts of chocolate!
Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1/2 cup chopped After Eight mints about 10 pieces
Instructions:
In a mixing bowl, whisk together heavy cream, milk, sugar, salt, vanilla extract, and peppermint extract until sugar is dissolved
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions
During the last few minutes of churning, add chopped After Eight mints and let them mix into the ice cream
Once churned to desired consistency, transfer the ice cream to a freezer-safe container and freeze for at least 2 hours before serving
