Crock Pot Mississippi Pot Roast



Crock Pot Mississippi Pot Roast is a tasty and simple dish that makes beef that is tender and juicy. When you mix ranch dressing mix, au jus gravy mix, butter, and pepperoncini peppers together, you get a flavor that is savory and slightly sour.

Ingredients:

  • 1 3-4 pounds beef chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1/4 cup butter
  • 5-10 pepperoncini peppers whole, or sliced depending on preference

Instructions:

Place the chuck roast in the crock pot

Sprinkle the ranch dressing mix and au jus gravy mix over the roast

Place butter on top of the roast

Add pepperoncini peppers around the roast

Cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender and easily shreds with a fork

Serve the roast with the cooking juices, pepperoncini peppers, and optional sides like mashed potatoes or vegetables

Healthy Spinach Artichoke Dip



This healthy spinach artichoke dip is a lighter take on the original recipe. Greek yogurt and low-fat cream cheese give it a creamy texture without all the extra calories. You can wear it to parties, game days, or just a cozy night in!

Ingredients:

  • 1 cup Greek yogurt
  • 1 cup low-fat cream cheese
  • 1 cup chopped spinach, cooked and drained
  • 1 cup canned artichoke hearts, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions:

If you are going to use the oven, preheat it to 350F 175C

Put Greek yogurt, cream cheese, spinach, artichoke hearts, Parmesan cheese, mozzarella cheese, garlic, onion powder, black pepper, and salt in a bowl

Mix everything together well

Move the mix to a slow cooker or a baking dish if you want to use the oven

For the slow cooker method, cook on low for one to two hours, or until hot all the way through and bubbling

For the oven method, bake for 25 to 30 minutes, or until hot all the way through and bubbling

Toast or vegetable sticks go well with this warm dish
