Perfect for hot summer days, these delicious paleo-friendly popsicles are made with toasted coconut. A satisfying and tropical dessert is made with toasted shredded coconut, creamy coconut milk, and natural honey or maple syrup as sweeteners.
Ingredients:
- 2 cups coconut milk
- 1/4 cup honey or maple syrup
- 1/2 cup unsweetened shredded coconut
- 1 teaspoon vanilla extract
Instructions:
In a saucepan, heat the coconut milk over medium heat until warmed through
Stir in the honey or maple syrup until dissolved
Remove from heat and stir in the shredded coconut and vanilla extract
Pour the mixture into popsicle molds
Freeze for at least 4 hours or until solid
Before serving, run the popsicle molds under warm water to release the popsicles
