Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup peanut butter chips
- 1/2 cup powdered sugar for coating
Instructions:
In a medium-sized mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt
Set aside
In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs and vanilla extract to the butter-sugar mixture, and mix until well combined
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms
Fold in the peanut butter chips into the cookie dough until evenly distributed
Cover the cookie dough with plastic wrap and refrigerate for at least 2 hours, or overnight, until firm
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
Take small portions of the chilled cookie dough and roll them into 1-inch balls
Roll each cookie ball in powdered sugar until fully coated, and place them on the prepared baking sheet, spacing them 2 inches apart
Bake in the preheated oven for 10-12 minutes, or until the cookies have crinkled on the surface and are set around the edges
Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
