This is a classic egg salad sandwich. It has fresh herbs, Dijon mustard, and a creamy egg mixture between two slices of bread.
Ingredients:
- 6 hard-boiled eggs, chopped
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh chives
- Salt and pepper to taste
- 8 slices bread of choice
- Lettuce leaves, for serving
Instructions:
Hard-boiled eggs, mayonnaise, Dijon mustard, dill, chives, salt, and pepper should all be mixed together in a bowl
Mix well until everything is well mixed
Cover 4 pieces of bread with the egg salad mixture
Add lettuce leaves to the top of each
To make sandwiches, cover with the rest of the bread slices
Lay out the sandwiches on a diagonal and serve
