This Toasted Coconut Creamsicle Smoothie tastes like a vacation in a glass. It tastes great with toasted coconut, creamy coconut milk, tangy Greek yogurt, and cool orange juice. Good for a quick and healthy breakfast or a snack that will fill you up.
Ingredients:
- 1/2 cup toasted coconut flakes
- 1 cup unsweetened coconut milk
- 1/2 cup Greek yogurt
- 1/2 cup orange juice
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract
- 1/2 cup ice cubes
Instructions:
Toast the coconut flakes over medium-low heat in a dry pan until they turn golden brown
Leave to cool
Toast the coconut flakes and put them in a blender with the Greek yogurt, orange juice, honey, and vanilla extract
Put the ice cubes in the blender and blend until the mixture is smooth and creamy
Put the smoothie into glasses, and if you want, top them with more toasted coconut flakes
